Avocado Pesto & Garlic Bread
Ingredients
Superfood Avocado Pesto
- 1 ripe avocado, peeled, pitted, diced
- I cup of packed fresh basil leaves
- 1/3 cup pine nuts
- 3 cloves fresh garlic, chopped
- Lemon Juice
- 2 Tablespoons extra virgin olive oil
- 1-2 Tablespoons of water as needed
- Salt and pepper to taste
Garlic Bread
- 1 Loaf of Frozen Garlic Bread
- Fresh chopped parsley for garnish
Frozen Shrimp
- 1 pound raw medium shrimp (17 to 21 per pound), peeled and deveined, tails removed
- 1 tablespoon olive oil
- Kosher salt
- Freshly ground black pepper
Dry Linguine Noodles
- 4 quarts water
- 1 tablespoon kosher salt
- 1 pound dried pasta
Steps
- Combine avocado, basil, pine nuts, and garlic in a blender.
- Slowly pour in lemon juice and olive oil. Add water as needed to achieve a smoother consistency.
