Avocado Pesto & Garlic Bread


Superfood Avocado Pesto

  • 1 ripe avocado, peeled, pitted, diced
  • I cup of packed fresh basil leaves
  • 1/3 cup pine nuts
  • 3 cloves fresh garlic, chopped
  • Lemon Juice
  • 2 Tablespoons extra virgin olive oil
  • 1-2 Tablespoons of water as needed
  • Salt and pepper to taste

Garlic Bread

  • 1 Loaf of Frozen Garlic Bread
  • Fresh chopped parsley for garnish

Frozen Shrimp

  • 1 pound raw medium shrimp (17 to 21 per pound), peeled and deveined, tails removed
  • 1 tablespoon olive oil
  • Kosher salt
  • Freshly ground black pepper

Dry Linguine Noodles

  • 4 quarts water
  • 1 tablespoon kosher salt
  • 1 pound dried pasta


  1. Combine avocado, basil, pine nuts, and garlic in a blender.
  2. Slowly pour in lemon juice and olive oil. Add water as needed to achieve a smoother consistency.
