Sushi Latkes with Truffle Teriyaki Sauce
Express your love of sushi in a whole new way with these rice latkes.
- 2 cups sushi rice, cooked
- 1/4 cup shredded carrots
- 2 tablespoons minced ginger/garlic mix
- 1/4 cup rice wine vinegar
- 2 tablespoons soy sauce
- 1 egg
- 2 teaspoons salt
- 4 tablespoons flour
- 5 scallions, thinly sliced
- 1 piece toasted nori (seaweed), chopped or shredded
- Oil for frying
Truffle Teriyaki Sauce
- 1/2 cup mayonnaise
- 2 tablespoons teriyaki sauce
- 1 tablespoon truffle oil
- Optional toppings: sliced scallions, ginger, avocado, smoked salmon/lox
- Prepare rice according to package instructions.
- Mix in the carrots, ginger/garlic mix, rice wine vinegar, soy sauce, egg, salt, and flour, stirring to combine.
