Sushi Latkes with Truffle Teriyaki Sauce

Ingredients

Latkes

  • 2 cups sushi rice, cooked
  • 1/4 cup shredded carrots
  • 2 tablespoons minced ginger/garlic mix
  • 1/4 cup rice wine vinegar
  • 2 tablespoons soy sauce
  • 1 egg
  • 2 teaspoons salt
  • 4 tablespoons flour
  • 5 scallions, thinly sliced
  • 1 piece toasted nori (seaweed), chopped or shredded
  • Oil for frying

Truffle Teriyaki Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon truffle oil
  • Optional toppings: sliced scallions, ginger, avocado, smoked salmon/lox

Steps

  1. Prepare rice according to package instructions.
  2. Mix in the carrots, ginger/garlic mix, rice wine vinegar, soy sauce, egg, salt, and flour, stirring to combine.
