Tiny Cinco de Mayo Chicken Mole
Ingredients
- 1 teaspoon vegetable oil
- 1 teaspoon tiny chicken thigh pieces
- Salt and pepper
- 1/2 tiny onion, sliced
- 1/4 clove garlic, minced
- 3 cumin seeds
- 3 coriander seeds
- 1 teaspoon chicken broth
- 1/2 teaspoon orange juice
- 1 teaspoon dried chilies, chopped
- 1/2 teaspoon raisins, chopped
- 1/4 teaspoon dried oregano
- 1/2 teaspoon chopped Mexican chocolate
- Warm tortillas
Steps
- Heat oil in a pot and add chicken. Season with salt and pepper and cook until browned. Remove chicken and set aside.
- In the same pot, add the onion, garlic, cumin and coriander, and cook 1 minute. Add broth and orange juice and let simmer.
