Tiny Cinco de Mayo Chicken Mole

Ingredients

  • 1 teaspoon vegetable oil
  • 1 teaspoon tiny chicken thigh pieces
  • Salt and pepper
  • 1/2 tiny onion, sliced
  • 1/4 clove garlic, minced
  • 3 cumin seeds
  • 3 coriander seeds
  • 1 teaspoon chicken broth
  • 1/2 teaspoon orange juice
  • 1 teaspoon dried chilies, chopped
  • 1/2 teaspoon raisins, chopped
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon chopped Mexican chocolate
  • Warm tortillas

Steps

  1. Heat oil in a pot and add chicken. Season with salt and pepper and cook until browned. Remove chicken and set aside.
  2. In the same pot, add the onion, garlic, cumin and coriander, and cook 1 minute. Add broth and orange juice and let simmer.
