Tiny Mother's Day Breakfast in Bed


  • 3 tiny slices bacon
  • 1 quail egg
  • 1 tablespoon chopped spinach
  • 1/2 teaspoon chopped tomato
  • Fresh chives, minced
  • 1/2 teaspoon grated cheese
  • Salt and pepper


  1. Heat a skillet and cook bacon until crisp. Remove from pan and chop into little pieces.
  2. Whisk egg, then add spinach, tomatoes, chives, bacon, half the cheese, salt and pepper. Pour mixture into pan and sprinkle remaining cheese on top. Cook until set on top. Garnish with more chives. Serve with croissant, parfait and coffee.
