Tiny Swedish Princess Cake

Ingredients

VANILLA CUSTARD

  • 2 cup milk
  • 3/4 cup granulated white sugar
  • 3 tbsp corn flour
  • 3 tbsp all-purpose flour, sifted
  • 6 egg yolks
  • 1 tsp vanilla extract

VANILLA SPONGE

  • 5 eggs, room temperature
  • 1 ¼ cup granulated white sugar
  • 1 tsp vanilla extract
  • ¾ cup vegetable oil
  • 2 ¼ self-rising flour, sifted

WHIPPED CREAM

  • 1 cup heavy cream
  • 2 tsp powdered milk
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract

CAKE

  • 2/3 cup raspberry jam
  • 7 oz buttercream
  • 10 oz marzipan
  • Green food color
  • Pink food color

Steps

  1. For the pastry cream, combine milk and half of the sugar in a medium saucepan. Bring to a boil.
  2. In a small bowl, mix the rest of the sugar, corn flour and all-purpose flour. Add the egg yolks and vanilla extract and whisk until combined.
