Tofu Chawanmushi (Steamed Savory Custard)

Ingredients

Tofu Chawanmushi (Steamed Savory Custard)

  • 200 grams silken tofu
  • 1 egg
  • 1/2 teaspoon instant dashi powder (Japanese soup stock)
  • 2 tablespoons water
  • 1 tablespoon potato starch
  • Salt
  • 30 grams chicken
  • 1 shiitake mushroom
  • 4 shrimp, washed and peeled
  • Mitsuba, cut into 2 centimeters length
  • 4 slices carrot, peeled and cut into a flower shape

Sauce

  • 4 tablespoons water
  • 1 teaspoon instant dashi (Japanese soup stock)
  • 1/2 teaspoon potato starch

Steps

  1. Cut chicken into bite-sized pieces. Cut off the stem of the shiitake mushroom and slice into 6.
  2. Combine egg, dashi powder, water, potato starch and salt in a bowl and mix well.
