Turkish Delight Cheesecake Bars

These bars are an absolute delight.

Ingredients

Cheesecake

  • 200g ginger nut or vanilla cookies
  • 160g unsalted butter, melted
  • 2 tablespoons water
  • 2 teaspoons gelatine powder
  • 375g cream cheese, softened
  • 1/3 cup sugar
  • ½ teaspoon finely grated orange rind
  • 2/3 cup cream
  • 150g white chocolate
  • ½ cup pistachio kernels
  • Turkish Delight topping
  • 85g gelatine powder
  • 1 ½ cups boiling water
  • 5 tbsp sugar
  • 1 tsp rose flavoring
  • 1 drop pink food dye

Turkish Delight Topping

  • 85g gelatine powder
  • 1 ½ cups boiling water
  • 5 tbsp sugar
  • 1 tsp rose flavoring
  • 1 drop pink food dye

Steps

  1. Grease a 6cm-deep, 19cm square cake pan. Line base and all sides with baking paper extending paper 5cm above each side.
  2. Place biscuits in a food processor. Process until coarse crumbs. Add butter and process to combine. Press biscuit into base of prepared pan. Chill for 30 minutes.
