2.0 is the next step of the evolution of our menu. We want to constantly evolve, inspired by the season and the ingredients. We believe in creativity but always maintaining flavors and respect of Italian culture and tradition. Guest's satisfaction is the goal. This menu is inspired by Tuscan and Sicily cuisine, using seafood and land products.
Cannolo Salmone&Mascarpone Sicilian style cannolo filled with salmon, mascarpone, cream cheese and fresh herbs. Bombolone Fagioli&Acciughe Savoury donut, filled with whipped bean puree and anchovies.
Revisitation of the traditional sicilian octopus and potato salad. Slow cooked octopus, served on salad made with heirloom tomatoes, taggiasca olives, basil, enriched by a soft and delicious whipped mash potato.
Carnaroli rice, cooked in a spring vegetable broth, "mantecato" with stracchino cheese and peas, garnished with toasted almonds and pea sprouts. The sweetness of the peas is balanced by the stracchino cheese and exalted by the saltiness of the toasted almonds.
Raviolo dough is made with a rich egg dough and flavoured with dehidrated tomato powder. The filling is made by a delicious hand chopped rabbit ragu'. The rabbit is braised with white wine and fresh herbs to maintain his delicate taste, and sauteed with brown butter and sage.
Perfect palate cleanser, an emulsification of Vodka and lemon sorbet. Refreshing and perfect to set yourself for the dessert.
Dark chocolate Sorbet, Strawberry, Cherry and Buttermilk
Dark chocolate sorbet is the best way to enjoy chocolate, in our opinion. A regular gelato coats your mouth with the dairy fat, a sorbet is cleaner and sharper in flavour intensity. It is served with strawberry sauce and fresh cherries which are exalted by the Vanilla buttermilk.
