I'm serving Caribbean dishes many of which are not being served by any other chef in Portland! It is a 4 course tasting menu and there is also a 4 course vegan tasting menu available.

Menu detail

Fish Cake with Mango slaw (gluten free)
Pan-fried Alaskan cod, onions, shallots and cilantro with a mango-habanero aioli.
Jamaican-style beef pattie with fried sweet plantains
Small Plate
I make the beef pattie from scratch on the day of the feast and the fried sweet plantains are cooked to order.
Jerk chicken, rice & peas and steamed Callaloo
The chicken spends 3 days in jerk marinade before I roast and smoke it. The rice & peas are a Caribbean staple and Callaloo is an iconic Jamaican leafy green not well known outside the country. The rice contains kidney beans and scallions. The Callaloo contains onions, scallions, green bell peppers, tomato, garlic and red chili flakes.
Key lime pie
I make the pie from scratch squeezing some 50 fresh key limes and mixing the tart juice with sweetened condensed milk and egg yokes. It is served with a dollop of whipped cream.
