This evening is about tasting some of the iconic summertime Caribbean dishes.

Menu detail

Gluten-free fish cakes with a mango slaw.
Gluten-free Alaskan cod with rice flour, onion, shallots, habanero and cilantro fried in vegetable oil with a mango-habanero mayonaise sauce.
Beef Patty with fried sweet plantains
Small Plate
Grass-fed ground beef with onion, thyme and curry sealed in a seasoned savory pastry shell.
Jerk chicken, steamed callaloo and rice & peas
Chicken quarters marinated in a jerk sauce of allspice berries, brown sugar, garlic, thyme, scallions, cinnamon, nutmeg and gluten-free soy sauce. The Callaloo is seared greens with onions, garlic, scallions, green peppers and chopped tomato, The rice and peas have scallions, kidney beams, thyme, garlic, onion and a touch of habanero.
Key lime pie with whipped cream.
Freshly-squeezed key limes with sweetened condensed milk, egg yokes and whipped cream in a graham cracker crust.
