The covered rice (arroz tapado) comes from the north of Peru, although covered rice is prepared in many parts of South America, it is a very simple dish that gets you out of trouble quickly, cheap and nutritious, you can use multiple meats and even seafood. This is one of the most popular dishes in the Peruvian gastronomy. Learn new tips and techniques along side with chef Rodrigo.
