Merchant Roots, Chef Ryan's first brick & mortar, will be a craft grocer in San Francisco's Fillmore district set to open in late 2016. It will feature artisan goods prepared by Chef Ryan Shelton, as well as a rotating, whimsical dinner series at the exclusive Chef's Table.

Chef Ryan was born and raised in San Jose before moving to southern California to pursue what would ultimately become a degree in Culinary Management from The Art Institute of CA - OC. During his time in school, he worked at several restaurants specializing in traditional world cuisines - Vietnamese, French, Indian, etc. As a culinary school graduate, he was trained in baking and pastry at the Ritz Carlton, Laguna Niguel before moving back to the bay area where he took a job as Pastry Chef at Chez TJ under Chef Chris Kostow which held two Michelin stars during his tenure. As Chef de Cuisine, of Baume Restaurant in Palo Alto, his modern French cuisine and impeccable attention to detail garnered two more Michelin stars in just over a year. He has worked as an Executive Chef at Le Cigare Volant under Randall Grahm, and most recently Reverb Kitchen & Bar (fka Verbena) in San Francisco.

Ryan loves cooking sophisticated comfort food. He imbues his dishes with a mindful, creative touch, always finding the balance between delicious and delightful. Chef Ryan's dishes find their foundation in comfort, thanks to his Italian heritage, and find their grace through his classical French training.
