Vegan Nigerian Cuisine is a dinner inspired by the recipes I grew up with as a child along with some of my own adaptations of traditional Nigerian recipes. The table will be full with egusi - a spinach and ground melon seed stew served with fufu - a soft warm dough used for dipping; tomato and pepper stew with coconut rice; and chocolate puff puff - a sweet fried dough. These recipes are close to my heart and I feel very lucky to be able to share them with you.

Coconut Roasted Plantain with Fresh Pineapple
Oven roasted plantain slices rolled in toasted coconut and served on a bed of fresh greens, shredded cabbage and chopped pineapple
Egusi with Fufu
A Nigerian stew made with ground melon seed, spinach and tomato served with fufu - a warm soft dough made with cocoyam and plantain flour
Tomato and Pepper Stew with Coconut Rice
Tomato stew with habanero tofu chicken served with brown rice and toasted coconut
Chocolate Puff Puff
Sweet fried chocolate dough topped with chopped hazelnuts and maple syrup
