Vegan Nigerian Cuisine is a dinner inspired by the recipes I grew up with as a child along with some of my own adaptations of traditional Nigerian recipes. The table will be full with coconut cabbage salad and fried plantain; egusi - a spinach, bitterleaf and ground melon seed stew served with fufu - warm soft dough used for dipping; and a purely decadent chocolate fried dough known as "puff-puff." I feel very lucky to be able to share these recipes with you.
