Vegan Nigerian Cuisine is a dinner inspired by the recipes I grew up with as a child along with some of my own adaptations of traditional Nigerian recipes. The table will be full with akara - a black-eyed pea fritter; palm fruit, pepper and onion stew served with plantain and fufu - a soft warm dough used for dipping; and a sweet pineapple thyme cake with cashew cream. This is food from the heart and I feel very lucky to be able to share these dishes with you.
