Vegan Nigerian Cuisine is a dinner consisting of the recipes I grew up with as a child. The table will be full with warm black-eyed peas and fried plantain, also known as "dodo," egusi cooked with bitterleaf, a dark leafy green that is quite bitter at first but becomes sweeter when cooked. These were my father's favorite recipes and I feel very lucky to be able to share them with you.

Coconut Cabbage Salad with Cilantro Lime Dressing

A hearty tomato and black-eyed pea stew with a side of dodo, sweet fried plantain
Egusi and Garlic Rice
Entree
A traditional Nigerian stew made with ground melon seed, spinach and tomato. Served alongside brown rice tossed with fresh garlic and olive oil

A delicious sweet fried dough served warm and sprinkled with coconut sugar
