Vegan Nigerian Cuisine is a dinner consisting of the recipes I grew up with as a child along with some of my own adaptations of traditional Nigerian recipes. The table will be full with warm black-eyed peas and fried plantain, also known as "dodo," spinach and yam stew cooked with bitterleaf, a dark leafy green that is quite bitter at first but becomes sweeter when cooked. These were my father's favorite recipes and I feel very lucky to be able to share them with you.
