When you are lucky enough to have a friend who has a charcuterie* in the Bay area and make delicious handmade sausages and confits you can't resist to put together a menu that will mix culinary heritage and talent. He is from the southwest of France, I'm from the southeast of France and together we will delight you with classic and delicious French dishes. Tomato cold soup - Stuffed tomato a la niçoise with salad, pine nuts and balsamic vinaigrette
This classic French dish is made out of French Coco Tarbais Bean, duck confit, Toulouse sausage, lard, pork belly, onions, carrots, pork and chicken bones, water, salt, pepper, duck fat and lot of time and all hand made locally with love. *(recipe based on the French Grande Confrérie du Cassoulet from Castelnaudary)

What's better than ice cream to end a delicious meal with refinement. This creamy, frozen dessert from Provence is a mix of Italian meringue, whipped cream, honey and caramelized nuts.
