Pissaladiere

If you’ve ever been to the south of France, you probably tried a pissaladière as it's the most famous appetizer in Nice and my favorite one! The caramelized onions, olives, and anchovies give it this unique taste.
Petits farcis niçois
Small Plate
A delicious dish of stuffed vegetables. We make them in the summer with the smallest vegetables we can find. There are as many petits farcis recipes as there are cooks and this one is a well kept secret in my family.
Marinated bell pepper (vegetarian)

The roasted bell peppers are marinated in a mixture of olive oil, balsamic vinegar, garlic and fresh herbs. This makes it a very tasty appetizer.
Pistou soup (vegetarian)

This summer soup is a provencal version of the minestrone. It's a hearty vegetable soup made with summer vegetables, a small shape of pasta and of course pesto!
Ratatouille (vegetarian)

A classic after a day spent at market, surrounded by the sights and smells of fresh ingredients: eggplant, tomatoes, onions, bell peppers, zucchini, garlic, and herbs all cooked slowly in olive oil.
Bugnes (vegetarian)

Bugnes are a doughnut-like pastry sprinkled with icing sugar! I have loved them since I was a kid. My touch: had a little bit of orange blossom water for a unique taste!
Iced nougat (vegetarian)

What's better than ice cream to end a delicious meal with refinement. This creamy, frozen dessert from Provence is a mix of Italian meringue, whipped cream, honey and caramelized nuts.
