In the west, Indian food is always related with Chicken Tikka Masala or Naan. However both these items do not have their roots in India. Indian food is under represented on the culinary map of the world.
I was told that Indian food can never be fine dining, I took that as a challenge and I embarked on this journey to change that by sharing my progressive indian food with everyone. I have picked dishes from different parts of the country and gave them a twist and different (hatke) names. I have incorporated molecular gastronomy as a part of Indian Cuisine while still maintaining the authentic flavors.
