They're cookin' up awesome food, but the word spreads purely through Instagram for this social media-run restaurant. A whole mix of Italian, Creole, Mexican, Hawaiian, soul food ... you name it. - That's me Nguyen Tran on the day I got busted for running an illegal restaurant out of my apartment in North Hollywood. And that's me a few years later running one of the most popular restaurants in all of Los Angeles. This is me now taking a break from it all. Making a show about going on adventures with some of my favorite chefs. We're gonna camp, we're gonna cook, who knows what's gonna happen? It's Campy. So, I'm in Compton, which I'm not at almost ever. And I heard about these guys, Trap Kitchen, that run this illegal underground kitchen out of their house. And the only way you find them is through Instagram. And they have a phone number there, so I'm just gonna ring and hope they don't think I'm a narc. I'm gonna figure this out. - [Man On Phone] Yeah, this is Trap Kitchen. - Holy crap! - Yeah. - I've been trying to get through for so long so, my friend told me about you guys, and he told me that you guys are legit, and I wanted to try you guys. - [Man On Phone] I'm gonna text you the address right now. You come through right now, pull up. - [Nguyen] I'm gonna pull up when I come through. I want four deadliest catches. - [Man On Phone] Oh for sure. - [Nguyen] Like if it's cool, this is cool. - [Man On Phone] You're asking too many questions. Hello, hello. I guess this, is this Trap Kitchen? You ever been like scared when you walk up to the door, you don't know what's gonna happen to you? Hey, hey, hey. Make sure you ain't got no wire on. - [Nguyen] No, no wire. - We started in a house. No publicity, no managers and people behind us helping us, nothing. - I had $300 to my name. I was ready to go sell drugs. 'Cause that's what we know to do. - When we sold out on the first day, we was just going crazy, 'cause we was just so surprised that it was all gone. - Turned that 300 into 3,000. You know what I'm saying, like? - All food. - All food, and I said I would never go back. We was just trying to make a way for our family. - [Man Red Shirt] To stay out of trouble. - Stay out of trouble. We best friends and business owners. I'm Spanky Hanas, man. - [Man Red Shirt] Roberto Smith. - We Trap Kitchen. This is how I get people to buy my food, man. We know we not supposed to be selling food out the house, but we taking a risk, and we have prosperity. That's what Trap means. Take risks and prosper. Something better that came from nothing. You gotta give somebody some hope. - This why they love the Trap Kitchen. You can't go nowhere and get lobster and crab, shrimp, salmon, 10s and $15, yeah right. But Trap? Come and get it like that. - Italian food, we have Creole food, we have Mexican food, we have-- - Try to touch all the cultures. - Hawaiian food, we have soul food. - So what you want? - A good way to stay off the streets, stay in the kitchen, you know? Always trying to do something positive. Have a positive look onto the community, you know what I'm saying? Food can stop wars, man. - Yeah. - That's better than money, that's better than anything. - [Roberto] This is the deadliest catch man. - This is the holy pineapple grail. - Today is pineapple Fridays. You want a delivery, you have to text in. Or if you want to come pick up, you call. We screen you, we don't want enemies pulling up, we don't want no negative publicity, none of that. So we screen everybody. We screened y'all. I just wanted to offer five star food to people that really can't afford it on the regular. - A slice of Beverly Hills here in Compton. - Yeah, right here in Compton. And right to the streets. - Thanks to Trap Kitchen. - Yeah. See a lot of our homies is get washed up, man. And that's so common around here. - [Roberto] And we ain't on the corner selling drugs no more. - We gotta inspire people to do anything but that, 'cause they taking us away every day. - [Roberto] You a chef, man. You started in the house. What happened in the house with you? - My apartment eventually became the number one Asian fusion restaurant listing in all of Los Angeles. Two health department guys show up, and they're like, we're with the health department. I'm like, come right on in. They come in, they started interrogating me, and then they bring out this printout of my Twitter feed, - Yeah your paperwork. - my Facebook, everything. They had me really good. I was really thrown off by that. Don't do it again! I'm like, sure I won't. And I did it again the next day, so. To deadliest catch. - [Spanky] Yeah. - Can't wait to go to Lake Elsinore with you guys. So A, so I'm going to the lake. I've gotta impress some friends. I need to get some fireworks to make me look really cool. - Alright, come on in. - Okay, let's go in! - Alright. - Let's shoot some fireworks! The golden shower fountain. - Yes. - Oh dude, the perfect show. I'm so excited to get all this stuff. - Alright, we're looking at about 285.17. - What? What, what? Thanks, man! - Yeah, have a good one. - Thanks for making me look cool. - [Vendor] Alright. - [Man] Welcome to Lake Elsinore. - [Nguyen] Thanks guys. - The heat just turned up out here. - Trap's on. - [Roberto] You got chicken legs and wings. We got ribs too, Saint Louis style. - What do you want people to taste when they're eating this? What makes you guys so different from what's on the street? - I just want to complement the meat by itself without killing it with sauce, you know? - But then you serve barbecue sauce on the side, so they can get some of the sweet there, right? - Yeah, don't kill the vibe, putting sauce on the side. Cut it right, across bone. - Whoa! Man down! Barbecue! - [Spanky] It's lit food. - Is it lit food out here? So why do you cook? - Why, I mean it's really a peace of mind. I learned that I get lost in it and get away from all my thoughts. Anything about too much that's going on in the world. Ain't no matter where we at, Spanky in the refrigerator. Watcha all got? That's how he always been. - Yeah man, you gotta tap into your skills, your gift that God gave you. Everybody has a gift, you just gotta tap into it. You gotta find what you are good at. - Stay focused in it. - What people don't know, burnt ends are the ends of the ribs long meat and it kinda curves around and gets more charred, but it's crunchy and delicious and I don't know why people throw them out. It's so good. Dry rub, the smoke is so good. It's amazing how delicious this is. That kid's crying 'cause you ain't sharing that with him. You're greedy, you're greedy, Kenny. - So what's up Nguyen, you ready? - I am born ready! - I can't swim, so I gotta make sure it's tight. I ain't gonna lie. - That's right, there ya go. These muscles are arm floaties. This is Batman and Robin. - Yeah. You don't fall off. Alright? - Yeah. - I was so proud of you, man. This is the best moment ever. - We just doing what we doing. This some good food in front of you. You not worried about beefing right now, you worry about this beef in front of you right here. - [Roberto] Yeah. - You know what I'm saying?
