BBQ Spare Ribs

Collard Greens

  • Butter
  • Pulled Pork
  • Onions
  • Garlic
  • Hot Sauce
  • Collards
  • Spices

To Assemble

  • White Bread

Steps

Rodney Sauce

  1. Add the white vinegar to a pot.
  2. Heat to a simmer.
  3. Slice the lemons.
  4. Add the slices of the lemons to the heated vinegar.
  5. Add the pepper and cayenne.
  6. Add the secret spices.
  7. Once the spices are added, remove the sauce from the heat to allow the sauce to cool and the flavors to marry.

BBQ Spare Ribs

  1. Remove the membrane from the bones.
  2. Shake the special rub onto the ribs.
  3. Rub the special rub on one side of the ribs.
  4. Flip the ribs over and rub the special rub onto the other side of the ribs.
  5. Load the ribs on the pit.
  6. Mop the ribs with sauce.
  7. Flip ribs.
  8. Finish cooking.
  9. Flip ribs.
  10. Mop again.
  11. Take the ribs off the pit and allow them to rest.

Collard Greens

  1. Add the butter to a pot.
  2. Add onions and garlic.
  3. Sauté onions and garlic.
  4. Add the pulled pork.
  5. Add water to pot.
  6. Add spices to the pot and bring to a simmer.
  7. Add the collards and cook until done.

To Assemble

  1. Slice individual ribs from the rack.
  2. Place the ribs on a plastic tray covered with butcher paper.
  3. Place the collard greens in a paper boat.
  4. Place the paper boat onto the tray.
  5. Pour the sauce into a container.
  6. Place the container onto the tray.
  7. Add two slices of white bread to the tray.
