- Welcome back to Day Tripper. We're off to the Royal National Park. So, it's 45 minutes south of Sydney. It's full of sort of secluded, white sand beaches, heaps of nature. I'll show you how to do a wicked, wicked steak sandwich that's gonna have balsamic onions, some salt-roasted beetroots. It's gonna be super tasty, and this is one of my most favorite places to check out, so let's get this going. All right, so we've just arrived here in the National Park. A little fact for you, this is actually Australia's first national park. So, we're gonna check out Watamolla Beach. It's sort of really secluded, awesome place to swim. There's sort of three or four main beaches in this National Park we have to check out. There's Garie, there's Marley, and there's also Burning Palms. All right, guys, so here we are. What we're gonna do is go for a walk over here, and that way we can show you a wicked view of the whole beach. How beautiful is this? Let's go check the beach out. Now, I wanna show you an unbelievable waterfall. Check this out. Pop you're head around the fauna here. So, you can swim underneath that. Ya know, all day long in the sun. Ya know, I'm tellin you right now, if this is not in your top ten things to do when you come to Sydney, you're joking, like this is unreal. All right, guys, look, the Royal National Park is so beautiful, and it's unreal. It's 24 k's long, you can literally walk the whole coast line, which is really beautiful. You see whales and things of nature. I mean, you can camp overnight at Garie Beach if you wanna make it longer than a day trip. And, the best thing is when you're done, you just catch a train back to Sydney. It's that easy. How beautiful is this place? Check it out, you got the beach, the waterfalls, white sand. It's secluded. Perfect place for a steak sandwich. So, the first secret to making a good steak sandwich is a nice, sort of thin, crispy piece of bread, ya know. You got your soft meat, your beautiful flavors, and then some crunchy salad. Oh, it's awesome. So, first step will be, I'm gonna slice our bread really fine. And, then, we're gonna basically grill it off in our little pan here, so we've got some really nice, thin, crusty slices of bread. For our layers of our steak sandwich, ya know, we got a really nice, good quality meat. Yeah, here's a tip, make sure you bring a chopping board. All right, so this is my little, special salt rub. So, what we're gonna do is season the steak with this sort of salt. So, we got some sea salt, some smokey paprika, fennel seeds, coriander seeds, so much in here, some chili. We've also got some black pepper. It's a really nice, sort of flavor punch on to that steak, and it's so gorgeous to cook it with. All right, so, once you've seasoned your steak, hot pan. Steak straight in. A little more salt. We're gonna sear one side, we're gonna flip it, and then we're gonna layer it. Onion jam on top. We've made ourselves some balsamic onion jam here. It consists of slicing your onions really nice and finely. And, what you do is throw em in a pan, a bit of thyme, two tablespoons of brown sugar, a bit of oil, garlic, and then you're gonna add yourself some balsamic. So, probably about half a cup of balsamic vinegar, and you're just gonna leave it there and cook it right down. And, what happens is, the onions cook down, all the liquid comes out, the balsamic comes down and starts to caramelize, so you get like a really nice, balsamic-y, acidic punch with the sweet onions. It's really nice, and it makes this steak sandwich super special. All right, so it's been about two or three minutes. It's ready to flip. Onion jam straight on top, just layer it out. So, that's gonna warm up. It's gonna be super awesome. It's gonna keep the steak moist. To that, we're gonna add some of this cheese, so a slice each. All right, so it's been there for another two or three minutes. It's about medium rare. All that onion jam's warm. That cheese is startin to melt, and it's time to plate or put together our sandwich. Beautiful, toasty bread. We're just gonna add some aioli to that. We're gonna add some of our beautiful beetroots. So, what we've done is, we've dusted them with some olive oil, salt, pepper. And, then, we've laid a big layer of rock salt in a tray, pop the beetroots down, wrap them up, and just chucked them in the oven for about half an hour until they're tender. And, what happens is all that sort of beautiful rock salt flavor comes inside the beetroot, and when you peel it, it's so beautiful. It's sort of like earthy, beautiful salty flavor, and that again, is another layer in our steak sandwich. It's gonna make that a little bit special. Layer em on your beautiful aioi, and that crispy toast. To that, we're gonna add our steak. So, we got our melted cheese. Ya know, we've got that onion jam, that beautiful spice mix, and ya know what, everyone uses lettuce or rocket, I'm just gonna use some really nice, fresh parsley. It just gives it a really nice sort of awesome, fresh taste. Also, a crunch. Literally, just stalks and all. Lid, and that is a steak sandwich fit for a king.
