- Alright guys, welcome back to Day Tripper by Bondi Harvest. We're organizing a Day Trip to Cockatoo Island. So, we're gonna catch a ferry across, and we're gonna show you guys around, you know, little bit of history, and we're gonna bang out some wicked marinated pork cutlets. They're gonna be super tasty. So, let's get this marinating happening. First step, we're gonna chuck everything in our bag. It's literally a mosh pit in a plastic bag. So, grab your pork, throw 'em straight in the bag. One, two, three. Two for me and one for you. Rind of one lemon. So, juice of one lemon. Squeeze the lemon through your hand. So, you want one tablespoon Dijon mustard. Chuck one bay leaf in. A pinch of dried chili. Crushed and chopped cloves of garlic. And then last, but not least, salt, pepper, and about 300 mills of olive oil straight in there. And bag it up, get all the air out of it, and that's ready for tomorrow's Cockatoo Island trip. So, Circular Quay, which is here we're at now, is basically where all the ferries head out from. So, so much life. The central station of the ferries. So, it's a wicked way to see the harbor. Super cheap. We're heading off to Cockatoo Island now, and it's gonna be unreal 'cause if you're under Harbour Bridge then you go to head out. Look at it. Alright guys, that's Cockatoo Island. It does look a little bit like Alcatraz, but it's not, it's not Sydney's Alcatraz. Anyway it's, it's pretty cool. A lot of, a lot of man-made work on there, you know, a little chipping away at the rock. It used to be a naval ship-building complex. Been reopened a little while ago and there's so many cool, sort of, buildings you can walk through. There's also a heap of really cool art festivals that are on there so, jump online, look at the calendar. Gonna be heap of fun. Alright guys, we're jumping off the ferry and fly around Cockatoo Island. Pretty wicked slab of sandstone. You can come and camp here, as well. So, it's just like renting a hotel room, only it's wicked little tents. It looks like a heap of fun, like, can you imagine, can you imagine how wicked it would be at night? Like, running around, head torches, ghosts. I am starving. I'm assuming we're gonna blast through this tunnel, start cooking those little marinated pork chops. So, let's set up and let's get these pork chops sorted. This is our 12 hour marinated pork chops, so they should be gorgeous and full of flavor. Pot, pan, camping pot, really handy, non-stick. Just straight on the stove, get nice and hot. Just grab it with a little camping tongs. Alright guys, you probably want five minutes, each side, Depending on your heat, depending on how large your chops are. Like I said, we're gonna cook 'em for five minutes, seal 'em off, get some heat into 'em, take 'em off and put a lid on, and that's gonna continue the cooking while you put it aside and get your salad ready. So, we're just gonna slice the apple nice and thin. Flip them over in a second. For your salad, gonna be the same sized battens. Really simple. Alright guys, so next step, we're gonna slice a celeriac. Celeriac's a, it's a root veg, similar flavor to celery. Also grab two radishes, actually grab three of these large radishes. Seriously, that red is gonna look so beautiful in this salad. So, we're just gonna wacker plane one clove of garlic into our salad. So, about a 100 mills of white wine vinegar. Good pinch of salt, then we give that a mix. Let's have a look, or a feel. Beautiful. So, what we're gonna do is, we're just gonna leave the lid on there. That's just gonna let it rest and continue to cook all the way through. It'll stay nice and moist and beautiful. So, the last step for this is, we're gonna add some nice mint, and I'm gonna crack some of these, sort of sexy little pistachios in there. Alright guys, so give it that final little mix and we're just gonna plate this up, and pork chops should be ready by now. Like I said, you know, these ingredients really go so well together. You know, the amazing pistachios and sweet apple. And then get your juice. Last, but definitely not least, pork chops been sitting there resting. Alright guys, there we have it. Our gorgeous apple, celeriac, pistachio, and mint salad and definitely last not least, our sexy marinated pork chops. Oh, it's juicy and rested. Thank you joining us on Day Tripper.
