Guy takes a trip to Maroubra Beach and makes a great vegetarian dish: spicy lentil lettuce wraps.

Spiced Lentil Lettuce Wraps


  • 100 grams dryer porchini mushroom

  • 2 liters veg stock

  • 1 tablespoon coriander seed

  • 1 tablespoon fennel seed

  • 1 teaspoon dried chilli

  • 1 tablespoon dried oregano

  • 1 onion

  • 1 red capsicum

  • 1 garlic

  • 2 zucchinis

  • 4 mushrooms

  • 1 cup lentils

  • 1 fresh chilli


  1. In a pod add all dry ingredients together and infuse into veg stock

  2. Dice all veg and fry till tender in a large pot.

  3. Add lentils to pot and coat in veg then add infused veg stock and cook till lentils are soft, about 20min medium heat.

- Alright guys look, we're off to Maroubra, but there's one spot that I had to show you before we go out there and that's Little Bay. I mean how gorgeous is this? It's one of Sydney's probably most secret beaches that you would not see on a guide book. So I wanna show you round here and then we're off to Maroubra and I'm gonna cook you up a wicked feast. I mean it's so beautiful and it's relatively calm. This is a bust headland instead of blocking up all the waves. I mean it's so sad because it's literally like stranded by a golf course and a jail. Don't tell anyone. I wanna keep it secret. I can just tell there'd be so many fish in there right now to go spear fishing with. Have a glance to see how calm and beautiful it is. We're gonna head over to Maroubra which is literally just over the headland here and we'll see how different it is. You'll be so, so surprised. We've just arrived to Maroubra. To be honest one of my favorite beaches just for a fact. I thought I'd have to show you. It's a gorgeous beach. It's got some wicked little cafes. Yeah, by the way the waves are really pumping so this is killing me right now cuz I wanna be in the water. Wouldn't have been good for time. I woulda been stuck out there for way to long. Alright so waves came through yesterday and we've got a offshore breeze and it is pumping. People are getting jacked left, right, and center. Now I'm going to show you around. We'll go for a walk up in north end here. Have to check this out. This is great Alright wanna be settin' up. So like I said we're going to do a veggie option. So the best thing about this recipe is you make a lot of it at home. You bring it to your day trip and it's easy. It's carefree and when you wanna eat you eat. It's nice and quick. So we've got some, like a mushroom lentil mix. I've actually got some dried porcinis and we've soaked them in veg stock. So the spice mix here it's got coriander seeds, chili, fennel, and some oregano as well. And then that's what's used to cook the lentils. So we fry all your onions, your zucchinis, your garlic, your chili, and all that sort of goodness off till it's tender. Throw your lentils in with your capsicums. You fry 'em off to mix 'em all together, and then you cook it in that veg stock, and it comes out so nice you know. As it cooks and reduces all those flavors amalgamate and come together and once it's done you literally box it up and take it on your day trip. It's that easy. Alright, so what we'll do is we'll start off by making a little smashed pumpkin and goat's cheese. So we've roasted some pumpkin off in the oven. A bit of oil, salt, pepper, chili, a little bit of garlic and some herbs and whacked in the oven at about 180 degrees till it's sort of tender and caramelized and beautiful. This is a really nice sort of quality goat's feta, and we're gonna mush 'em together. The mix of pumpkin and goat's cheese is so tasty. What we'll do is we'll start by whacking in a bowl our pumpkin and our goat's cheese. We're gonna add some herbs. So we're just gonna pick some fresh parsley and some fresh mint and that's gonna mix through it so you're gonna have like a sort of herbaceous beautiful sort of, I suppose a sauce to accompany these lentils. Alright so we have a nice big sort of fresh beautiful iceburg lettuce and what we wanna do is we wanna try and get whole leaves. So they're gonna be our cups or our plates so to speak. If you're gluten intolerant then this is a perfect way to use something apart from bread. Alright so we got our lettuce cups. We're gonna start with our lentil mix. Okay a little bit more. Like I said, watching all these surfs making me really hungry so I'm gonna fill them right up. Alright so to that we're gonna add this pumpkin and goat's cheese mix. Alright guys, so that's it. The finished product. Our gorgeous flavor filled lentils, our roast pumpkin with goat's cheese in these sexy little crispy lettuce cups. Mark there's one for you buddy. You enjoy it.
