Wives were bad. Do you ever wonder about Kate? - Oh, she for sure can't read. - I noticed it when we were doing Great Expectations, and she kept referring to Estella as Gwenyth Paltrow. - It is a full on blizzard out there. In middle school she used to play the flute. She loves to eat my snacks, like yesterday I made this giant tub of guacamole, and there was nothing in it when I got back. She secretly loves hugs, but she's never done hard drugs. Except for that time in college that we don't talk about, right . That's my poem. - I didn't eat the guacamole. - No, it's okay, Vic. What, you guys are banned from book club! - I warned you about Girl Talk, but did you listen? No. And now, we have to figure out how to get blood out of the duvet cover. - Oh, you just use the saliva of the person who bled. I read it on a message board. - [Emma] Cooking is a great way to bring people together. - It's also a great way to get away from people. Be like, "Sorry, can't talk right now, "gotta go spend time in the kitchen without you!" - You look at this Sharper Image catalog while I cut vegetables alone. - You hang out with this cat an that pillow, and I'm gonna go saute something. No you can't watch. - And nothing unites people more than pizza. Unless you don't like pizza. - In which case, we can't be friends. - So today, we're making two pizzas so delicious they just might mend a recently destroyed friendship. - I'm making a goat and ricotta cheese pizza with cherries, carmelized onions, and arugula. - And I'm doing a bar-b-cue zucchini, collard, and mushroom pizza. We're both using an almond meal crust, because chances are, you have a gluten free friend. - And what could be worse than a friend having digestive problems in your home? - We should hurry. For each crust, you'll need two cups of almond meal, a 1/3 a cup of flax meal, one cup of water, two teaspoons of chopped rosemary, four tablespoons of cornstarch, one tablespoon of baking powder, one teaspoon of salt, one tablespoon olive or canola oil, and a half a cup of mashed parsnip or potato. - Preheat your oven to 400. In one bowl, we're going to mix flax meal and water. We're gonna let that sit for a couple a minutes until it thickens, and that will act like eggs to bind the dough. Whisk together your dry ingredients, and add the rosemary. Really, you can add any herbs and spices that you like to change the personality of your crust. Can I see? Yep, it's just about there. You want it about the consistency of eggs, but a little bit thicker. - Now I'm going to add oil and mashed parsnip to the flax goop. And if you don't have parsnips, you can use carrots or potatoes. Those will work great too. - [Emma] Let's add the wet ingredients to the dry ingredients. - And stir until combined. - We doubled the recipe for our two pizzas. So now we're going to split it in half, and press it onto the parchment, in an even half inch layer. Your hands are probably gonna get a little sticky, so just wet them, and then keep on pressing. - So now, we're gonna prebake these in the oven for about 20 minutes. So while those are cooking, we're gonna get started on our toppings. For my pizza, you will need 3/4 a cup of goat cheese, 1/4 a cup of ricotta, one cup of fresh cherries, pitted and cut in half, half of a red onion, sliced. Balsamic vinegar and olive oil for drizzling. One tablespoon of honey, and some fresh arugula. - [Emma] And for mine, I'm using about a cup of bar-b-cue sauce, three large collard leaves, one zucchini, sliced, and one cup of sliced crimini mushrooms. I've thinly sliced all of my veggies. - I've sliced this red onion, and I've cut my cherries in half and pitted them. - I'm going to saute them each individually, with olive oil and a sprinkle of salt. - And I'm going to carmelize these red onions with a little bit of honey. - Let's do it. These are all nice and soft, so we're gonna get them onto the plate. Yup, that's it. Okay, so we're gonna call these done. - Mmm. So now, we're going to assemble our pizzas. I'm going to start with my ricotta and goat cheese mixture, and then I'm going to add the onions and the cherries, and drizzle some balsamic vinegar. - I'm gonna sauce this darlin', then throw down the zucchini, collards, and mushrooms. - Alright, let's pop 'em back in the oven. - Yep. - I didn't know that about avocados. - I know, I feed my cat guacamole all the time. - [Both] Pizza! - So now, I'm just gonna add my fresh arugula, some olive oil, and a pinch of salt, and we'll be done. Voila! - Thank you madam. Alright, let's give this a go. Pizza party! - Pizza! Cheers! - Mmhmm. - Maybe they won't notice if we just stay in here. - Maybe they already killed each other. - Well, no matter what happens, these pizzas are delicious. - Yeah, my night's going great. - Yeah. Pizza? - Is it a gluten free crust? You guys are the tits, I'm starving. I'm sorry I killed your dog, I didn't mean to. - It's okay, Kate. Part of your brain is missing. - Mmm. - Okay, you guys are definitely back in book club. - Mmhmm. - We could start our own Sisterhood of the Traveling Pants. - Mmhmm. - I'd rather die. - I'm giving up reading.
