1 cup salted warm water
1 tablespoon yeast
1 teaspoon sugar
3 cups baking flour
1 teaspoon thyme leaves
1 lemon rind
3 bunches basil
1/4 cup Parmesan cheese
2 garlic cloves
1/4 cup pine nuts
In a large mixing bowl, whisk together warm water, yeast and sugar until combined. Let sit out for 2 minutes until frothy.
Add flour, thyme and lemon rind and mix well until combined, then wrap in a damp tea towel and let rise for about one hour until tripled in size.
Transfer your dough onto a well-floured surface and knead for about 10 minutes until silky and elastic. Cut into 8 equal portions, then use a rolling pin to roll each into a 6-inch diameter.
To make pesto, chop all ingredients, mix together then season with salt and pepper.
