Filipino Ceviche

Ingredients

  • 1 pound blue marlin, cut into 1 inch cubes

  • 1 red onion, thinly sliced

  • 1 jalapeno, minced

  • ½ cup cane vinegar

  • 2 tbsp brown sugar

  • Juice of 2 limes

  • 1 garlic, minced

  • 1 tbsp ginger, grated

  • ⅓ cup coconut milk

  • 10 cherry tomatoes

  • 1 tbsp toasted coconut

  • 1 tsp extra virgin olive oil

  • ½ tsp black pepper

  • ½ tsp kosher salt

Instructions

  1. In a large bowl, add fish, red onion, jalapenos, cane vinegar, brown sugar, lime juice, garlic, and ginger. let sit for 15 to 20 minutes, in the refrigerator. Remove from refrigerator, add coconut milk. cherry tomatoes and toss. Sprinkle with black pepper and salt. Top with toasted coconut. Drizzle with oil. Serve with fried wontons, taro chips, or tortilla chips.
