What's not to love about these super easy, delicious and nutritious brownies?
1 (15 ounces) can black beans, rinsed and drained
1 tablespoon apple cider vinegar
1/2 cup organic pumpkin puree
3 tablespoon coconut oil, melted
1 teaspoon pure vanilla extract
1/3 cup pure maple syrup
1/2 cup old fashioned oats
1 teaspoon baking soda
1/2 cup dark cocoa powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon sea salt
2/3 cups dark chocolate chips, plus more for topping
Preheat oven to 350 degrees F and grease an 8x8 inch baking pan.
Combine all ingredients in the food processor except chocolate chips. Process until very smooth.
Pour into a large mixing bowl and then fold in chocolate chips.
Pour the batter into the prepared baking pan and top with more chocolate chips.
Bake for 20-22 minutes.
Remove from oven and let cool in the pan.
