These treats prove chocolate bars can be both yummy and healthy.

Chocolate Coconut Cashew Bars

Ingredients

  • For the Cashew Bar:

  • 11/2 cups raw cashews

  • 1 cup rolled oats

  • 1/4 cup coconut oil, melted

  • 1/4 cup pure maple syrup

  • 1/8 teaspoon sea salt

  • For the Chocolate Topping:

  • 1/4 cup pure maple syrup

  • 1/4 cup coconut oil, melted

  • 1/2 cup dark cocoa powder

  • 1/4 teaspoon coarse sea salt, for topping

Instructions

  1. Add the cashews to food processor and blend for 2-3 minutes, until the cashews start to form a paste. Scrape down the sides as needed.

  2. Add rolled oats, coconut oil, pure maple syrup, and sea salt and process for another 2-3 minutes until a ball forms.

  3. Line a loaf pan or square baking pan with parchment paper. Place the cashew mixture into the pan and press down firmly, spreading evenly to all edges.

  4. To make the chocolate topping, combine the pure maple syrup, melted coconut oil and cocoa powder in the food processor and process until smooth.

  5. Pour the chocolate topping over cashew mixture, spreading evenly.

  6. Sprinkle with coarse sea salt.

  7. Freeze for 20 min. before slicing into bars and serving.
