Moist, flavorful and gluten-free apple cinnamon goodness.
For Apple Cinnamon Mix:
1/2 cup of coconut sugar
2 teaspoons cinnamon
1 peeled and diced apple
1 teaspoon coconut oil
1/8 teaspoon kosher salt
1/2 cup unsweetened apple sauce
1 tablespoon coconut oil
2/3 cup coconut sugar
2 teaspoons vanilla extract
1/2 cups plain Greek yoghurt
1 1/2 cup GF multi-use flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon kosher salt

Preheat oven to 350°F.
In a small mixing bowl, add the ingredients for the apple cinnamon mixture, stir well and set aside. In a mixing bowl mix together the wet ingredients.
Add in the gluten-free flour, baking powder, baking soda, and kosher salt. Mix just until combined. Fold in the chopped walnuts.
Spread half of the dough in a loaf pan. Add 1/2 of the apple cinnamon mixture evenly over the dough. Pour the remaining dough on top, followed by the remaining apple cinnamon mixture.
Bake for 40-50 minutes until toothpick comes out clean.
