Ingredients

  • For the fried rice:

  • 1 tablespoon peanut oil

  • ½ white onion, finely diced

  • 3 tablespoons green onion, diced

  • 1 ½ cups mixed vegetables, frozen

  • 1 large egg

  • 2 cups day-old rice

  • 2 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • For the wings:

  • 6 chicken wings, marinated

  • 2 tablespoons peanut oil

  • Zest of 2 oranges, and juiced

  • 1 teaspoon sugar

  • 2 tablespoons soy sauce

  • 2 cloves of garlic, minced

  • ½ teaspoon salt

  • 1 tablespoon sesame seeds, for topping

  • 1 tablespoon green onion, sliced and for topping

Instructions

  1. In a frying pan on medium to high, heat peanut oil and sauté onion until translucent, about 5 minutes. Add green onion and mixed frozen vegetables, then stir to combine. Push mixture to 1 side, and drop an egg on the other side of the pan. Working quickly, break up the egg and cook to a scramble.

  2. Next, combine with vegetable mixture and add in day-old rice. Then add soy sauce and rice vinegar. Mix together and remove from heat.

  3. Preheat the oven to 375 degrees.

  4. Stuff each marinated wing with approximately 3 tablespoons of prepared fried rice and secure with a toothpick.

  5. In a small bowl combine, orange zest and juice, sugar, soy sauce, garlic, and salt. In a frying pan on medium to high heat, add peanut oil. Once heated, add chicken wings and cook each side until golden.

  6. Brush wings with orange glaze mixture on both sides. Place in the oven to finish cooking all the way through to 165 degrees. Top with green onion and sesame seeds. Serve, and enjoy!
