Who says you can't enjoy a flaky whole wheat biscuit topped with creamy turkey sausage gravy guilt free?
For the sausage gravy:
1 pound lean ground turkey
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon cayenne powder
1/3 cup whole wheat flour
3 cups unsweetened almond milk
Salt and pepper to taste
For the biscuits:
2 cups whole wheat flour
4 teaspoons baking powder
1/4 teaspoon salt
4 tablespoons butter, grated and chilled
1/2 cup Greek yogurt
1/2 cup almond milk

Preheat oven to 425°F. In a bowl, mix flour, baking powder, and salt. In another bowl, mix yogurt and almond milk. Then add chilled, grated butter into the flour. Cut butter into the flour with your hands or fork, until it looks like crumbs. Add the milk mixture and mix and knead just until combined.
Dump out onto a lightly floured surface and pat out the dough, until it's about 1/2 inch thick. Cut into round and place on a parchment-lined baking sheet. Brush the tops with almond milk and bake for 10-12 minutes or until browned. Set aside.
In a bowl, mix ground turkey and seasonings.
Heat a pan on medium-high. Crumble turkey sausage into the pan and cook for 5 minutes, or until cooked through. Coat with whole wheat flour and stir well. Gradually add almond milk, stir, and allow to thicken. Season with salt and pepper.
Slice warm biscuits in half and ladle sausage gravy on top.
