Ingredients

Sauce

  • 1/2 cup fresh pineapple juice
  • 1/4 cup rice vinegar
  • 2 tablespoons tomato paste
  • 1 1/2 tablespoons tapioca starch
  • 1/2 tablespoon tamari or soy sauce

Sweet and Sour Pork

  • 1/4 cup tapioca starch
  • 2 large eggs, beaten
  • 1 cup almond flour
  • Canola oil, as needed
  • 1 pound pork tenderloin, cut into 3/4-inch pieces
  • 2 tablespoons minced garlic
  • 1/2 red bell pepper, cut into 3/4-inch pieces
  • 1/2 green bell pepper, cut into 3/4-inch pieces
  • 1/2 large yellow onion, cut into 3/4-inch pieces
  • 1/2 cup fresh pineapple chunks
  • Sesame seeds, for garnish

Steps

Sauce

  1. In a small saucepan over medium heat, whisk together all of the sauce ingredients.

Sweet and Sour Pork

  1. Set up a dredging station with the tapioca starch, eggs and almond flour.
  2. Carefully dredge each piece of pork in the tapioca starch, then the egg and then the almond flour, until completely coated. Shake off any excess almond flour.
  3. Heat two tablespoons of oil in a large saucepan on medium-high heat, add the pork and cook until cooked through and golden brown. Set aside.
  4. Once the pork is finished, heat one tablespoon of oil in the same pan.
  5. Add the garlic, peppers, onions and pineapple until it is just about done.
  6. Add the sauce to the pan to heat and thicken slightly. Once heated add the pork just to mix everything together and warm through.
  7. Remove from pan and serve immediately.
