Keto Grilled Cheese on Cauliflower Bread

Lightened Up - "The More Cheddar the Better"

  • 1 12-oz bag frozen cauliflower rice, thawed (or homemade steamed cauliflower rice)
  • ½ tsp sea salt
  • ¼ cup almond flour
  • 1 large egg
  • ¼ tsp garlic powder
  • ¾ cup grated cheddar cheese
  • 2 tbsp avocado oil mayonnaise
  • 1½ tbsp minced pimiento peppers
  • 1 tbsp full-fat cream cheese, softened
  • ⅛ tsp ground cayenne pepper
  • ⅛ tsp each sea salt and ground black pepper
  • 1 tbsp organic unsalted butter


  1. Preheat oven to 400F
  2. Using a food processor, place florets in a large food processor and pulse until finely chopped.
  3. No Food processor, use a box grater, grate florets along the medium holes.
  4. Line a strainer with a kitchen towel. Place cauliflower rice on top of it, sprinkle with salt and let dehydrate for 20 minutes.
  5. Place cauliflower rice in a dry dish towel and wring out any excess moisture. Make sure you get all the water out.
  6. In a bowl, mix dried cauliflower rice, almond flour, egg and garlic powder.
  7. On a well-greased baking sheet, press the dough into a 9x7 inch rectangle.
  8. Bake for 30 minutes.
  9. Flip and cook for 10 minutes on the other side.
  10. Let cool for 5 minutes before cutting.
  11. While cauliflower "bread" is cooking make cheese mixture
  12. Mix cheeses, mayo, pimientos, cayenne, salt and pepper thoroughly.
  13. Cut cauliflower bread into 4 pieces.
  14. Assemble sandwiches placing cheese mixture on the bread.
  15. In a skillet, melt butter.
  16. Cook the sandwiches 2 minutes per side.
