Ingredients

Chicken

  • 4-5 lbs chicken (Thighs and Legs)
  • 1 cup Greek yogurt
  • 4 TBS coconut oil

Seasoned Dry Mix

  • 1/3 cup flour
  • 1/3 cup almond flour
  • 1/3 cup potato flour
  • 1 cup Panko breadcrumbs
  • 2 tsp white pepper
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1/2 tsp baking powder
  • 1/4 tsp turmeric
  • 1/4 tsp cayenne

Waffle

  • 1 cup rolled oats
  • 2 medium bananas, cut into chunks
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Steps

Chicken

  1. Prep the chicken: Mix chicken and yogurt in a bag, squeeze air out. Massage and marinate for 1 hour.
  2. preheat oven to 425 F.
  3. Place a baking dish with grill on top in the oven for 15 mins to heat. Grease the grill with coconut oil.
  4. Remove chicken from yogurt, shake excess and dredge in seasoned dry mix. Coat on all sides. Place on grill on top of baking dish, making sure to leave room in between each piece.
  5. Bake for 12 mins uncovered. Turn the chicken and cook for 12 more minutes.
  6. Rest for 5mins. .
  7. Assemble waffles and chicken, serve with Monkfruit Sweetener or equivalent.

Seasoned Dry Mix

  1. Mix all seasoned dry mix ingredients in a bowl.

Waffle

  1. Make the Waffle: Pace all ingredients in a blender and blend until smooth.
