Cauliflower Pizza

Ingredients

  • 1 medium-sized head of cauliflower, stalk removed
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1 tablespoon cornmeal
  • 2 eggs, lightly beaten
  • 1/2- 3/4 c Tomato Sauce
  • 8 oz Whole Fresh Mozarella
  • Basil
  • Extra Virgin olive oil

Steps

  1. Preheat oven to 250 F.
  2. Line a baking sheet with parchment paper.
  3. Break cauliflower into florets and pulse in food processor (you should have about 4 cups)
  4. Place in strainer and put in pot of boiling water (making sure water doesn't touch cauliflower). Cover and steam for 10 minutes.
  5. Once steamed, cauliflower needs to be drained well. Wring out in kitchen towel to get as dry as possible.
  6. Spread cauliflower on parchment paper in a thin layer and dry at 250 F in the oven for 30 minutes.
  7. Once dry, mix dried cauliflower with cornmeal, parmesan, mozzarella, salt and garlic powder.
  8. Shape into a pizza. Place on a new sheet of parchment.
  9. Bake for 20 minutes at 400 F
  10. Top with tomato sauce and thinly sliced fresh mozzarella.
  11. Bake an additional 10 minutes.
  12. Top with extra virgin olive oil and fresh basil.
