Ingredients

  • 1 baked chicken thigh seasoned with cumin, chopped
  • 1 1/2 cups cooked rice
  • 1/4 cup grated cheddar cheese
  • 1/3 large tomato, chopped
  • 1/4 red bell pepper
  • 1/2 can chickpeas, drained
  • 1 cup shredded romaine
  • 1/2 avocado, sliced
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon chopped cilantro
  • 1 hot sauce packet

Steps

  1. In a large reusable container, layer rice, chicken, shredded cheese, tomato, bell pepper, chickpeas, lettuce, avocado, yogurt and cilantro. Add any other leftover veggies and place a hot sauce packet on the side of the container.
