- 1 baked chicken thigh seasoned with cumin, chopped
- 1 1/2 cups cooked rice
- 1/4 cup grated cheddar cheese
- 1/3 large tomato, chopped
- 1/4 red bell pepper
- 1/2 can chickpeas, drained
- 1 cup shredded romaine
- 1/2 avocado, sliced
- 3 tablespoons plain Greek yogurt
- 1 tablespoon chopped cilantro
- 1 hot sauce packet
- In a large reusable container, layer rice, chicken, shredded cheese, tomato, bell pepper, chickpeas, lettuce, avocado, yogurt and cilantro.
- Add any other leftover veggies and place a hot sauce packet on the side of the container.
