Ingredients
Chopped Salad
- 1 baked chicken thigh seasoned with onion & garlic powder, chopped
- 1/4 red bell pepper, chopped
- 1/3 large tomato, chopped
- 1/4 carrot, grated
- 1/4 cup cubed cheddar cheese
- 1/2 can chickpeas, drained
- 2 cups shredded lettuce
Dressing
- 1/2 lemon, juiced
- 1 tablespoon rice vinegar
- 3 tablespoons olive oil
- Salt and pepper
- 1/2 honey packet
Steps
Chopped Salad
- In a large reusable container, layer the chicken, bell pepper, tomato, carrots, cubed cheese, chickpeas and lettuce.
Dressing
- In a small bowl, add lemon juice, rice vinegar, olive oil, salt, pepper and honey.
- Transfer into a small reusable container.
