Struggle Meals - "Lunches for Work"

Ingredients

Chopped Salad

  • 1 baked chicken thigh seasoned with onion & garlic powder, chopped
  • 1/4 red bell pepper, chopped
  • 1/3 large tomato, chopped
  • 1/4 carrot, grated
  • 1/4 cup cubed cheddar cheese
  • 1/2 can chickpeas, drained
  • 2 cups shredded lettuce

Dressing

  • 1/2 lemon, juiced
  • 1 tablespoon rice vinegar
  • 3 tablespoons olive oil
  • Salt and pepper
  • 1/2 honey packet

Steps

Chopped Salad

  1. In a large reusable container, layer the chicken, bell pepper, tomato, carrots, cubed cheese, chickpeas and lettuce.

Dressing

  1. In a small bowl, add lemon juice, rice vinegar, olive oil, salt, pepper and honey.
  2. Transfer into a small reusable container.
