BBQ Drumsticks With Cauliflower Mash & Coleslaw

Ingredients

  • 8 drumsticks
  • 2 scallions, chopped
  • Spice rub:
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 3 tablespoons sugar
  • 4 tablespoons paprika
  • 3 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 1/2 teaspoon cayenne pepper
  • Barbecue sauce:
  • 1 cup ketchup
  • 2 tablespoons molasses
  • 3 tablespoons brown sugar
  • 2 yellow mustard packets
  • 3 tablespoons white vinegar
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 3 Sriracha packets
  • Cauliflower mash:
  • 1 large head of cauliflower, cut into florets
  • 1/3 cup half-and-half
  • 1/4 cup Parmesan cheese
  • 3 butter pads
  • Salt and pepper
  • Cole slaw:
  • 1/2 head purple cabbage, shredded
  • 1/2 carrot, shaved
  • 1/2 cup mayo
  • 1 tablespoon white vinegar
  • 1 honey packet
  • Salt and pepper

Steps

  1. For the spice rub: Mix all spices in a bowl and store in a jar with a tight fitting lid.
  2. For the chicken: Preheat oven to 425 degrees. Toss the chicken with vegetable oil and then coat liberally with 3 tablespoons of the spice rub. Place in the oven and cook for 25 minutes.
  3. For the barbecue sauce: Add all ingredients to a sauce pot and bring to a boil. Reduce heat and simmer for 3 to 5 minutes.
  4. Remove chicken from the oven and turn on the broiler. Brush the chicken liberally with barbecue sauce, coating well. Place under the broiler for an additional 5 to 8 minutes until nice and charred. Garnish with scallions.
  5. For the Cauliflower mash: Bring a large pot of water to a boil. Season with salt. Add the florets and cook for 10 minutes.
  6. In a bowl, add the half-and-half, cheese and butter. When cauliflower is done, add to the bowl. Mash well.
  7. For the slaw: In a bowl, whisk the mayo, vinegar and honey. Add the vegetables and toss to coat.
