Ingredients

Soft Scramble

  • 4 Eggs
  • Salt and pepper
  • 2 butter pats
  • 2 slices of toast
  • 2 tsp minced chives

Hard Scramble

Steps

Soft Scramble

  1. Add the butter and crack the eggs directly into a cold 10-inch non-stick skillet. Turn heat on to medium-low. Break the yolks with your spatula and begin to stir the eggs in big, slow swirls, creating a homogenized liquid.
  2. Continue to stir and fold the eggs from the outside in for about 7 minutes, or until almost an oatmeal consistency where no more liquid is running out. The carryover cooking will finish the eggs. Remove from heat, season with salt and pepper, garnish with chives and serve on top of warm toast.

Hard Scramble

  1. Heat a 10 inch non-stick skillet over high heat. Whisk the eggs in a medium bowl with a fork and season egg mixture with salt and pepper.
  2. Melt the butter in the pan and add the whisked eggs. Vigorously stir the mixture constantly with a rubber spatula, fast and deliberately until the eggs are set, keeping in mind that the carryover cooking will be stronger due to the higher heat. The eggs should look dry and be completely set. Remove from heat and garnish with chives, and serve with warm toast.
