Ingredients

Chicken Sandwich

  • 4 boneless skinless chicken thighs (about 1 ½ pounds) , trimmed
  • 6 cups vegetable oil
  • 8 pieces white bread
  • 12 bread and butter pickle rounds, for serving

Spice Mix

  • 2 tablespoons Kosher salt
  • 2 tablespoon light brown sugar
  • 2 teaspoons cayenne pepper
  • 2 teaspoons paprika
  • 2 teaspoons ground black pepper
  • 2 teaspoons garlic powder

Flour Mix

  • 1 cup flour
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1 1/2 teaspoons ground black pepper

Buttermilk Mixture

  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 2 teaspoons cayenne pepper
  • 1 large egg

Steps

Chicken Sandwich

  1. Make the Spice Mix: Combine salt, brown sugar, cayenne, paprika, black pepper, and garlic powder in a bowl. Transfer half of the spice mix to a large, heat proof metal bowl. Reserve for later.
  2. Make the Flour Mix: whisk the flour, cayenne, salt, and black pepper together in a separate, large bowl.
  3. Make the Buttermilk mixture: Whisk the buttermilk, hot sauce, cayenne and egg in another separate, medium bowl. You should have three bowls for the chicken coating: half of the spice mix; the flour mix; the buttermilk mixture.
  4. Heat oil to 350 degrees F in a large cast iron skillet. The oil should be filled to about halfway.
  5. Dredge the chicken in half of the spice mix, then coat in the flour mix, dusting off any excess, then a dunk into the buttermilk mixture, and finally back into the flour mix. Again, gently shake off any excess flour. Place the dredged chicken in the hot oil and fry until golden brown, about 8 minutes per batch. Repeat with remaining chicken thighs.
  6. Remove the chicken to a wire rack-lined sheet tray to rest.
  7. Carefully ladle 1 cup of the used hot oil into the heat proof metal bowl with the reserved spice mixture. Gently toss the fried chicken in the hot spiced oil.
  8. Sandwich 1 piece of fried chicken between 2 slices of white bread, adding pickles and extra hot sauce as desired.
