Ingredients

Maple Brined Turkey Breast

  • 1/2 cup Kosher salt
  • 1 cup Maple Syrup
  • 2 bay leaves
  • 4 sprigs fresh rosemary
  • 1 bone in turkey breast (5 pounds)

Turkey Sandwich

  • 4 slices sourdough bread
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 8 oz sliced maple brined turkey breast
  • 2 ounces sliced Swiss cheese
  • 8 slices bacon, cooked until crisp
  • 2 leaves green leaf lettuce
  • 4 slices tomato

Steps

Maple Brined Turkey Breast

  1. In a large pot, add the salt, maple syrup, bay leaves, and rosemary and stir in 4 cups of water. Bring to a simmer making sure to dissolve the salt. Remove from the heat and stir in 8 cups of ice water to chill to drop the temperature. Add the turkey breast, making sure it’s completely submerged. Cover and refrigerate for 12 hours.
  2. Preheat the oven to 325 degrees F.
  3. Place turkey skin side up on a sheet tray or cast iron pan. Pat dry with a paper towel. Roast in the oven for 1 1/2 -2 hours, until a thermometer reads 165 degrees F, rotating the sheet tray after one hour. (If the skin is overbrowning, cover loosely with foil while roasting). Remove the turkey breast from the oven, cover with foil and rest for 25 minutes before slicing.
  4. With a sharp knife, slice the rested turkey breast into 1/8 inch deli-style slices.
  5. Cook's Tip: If turkey floats in the brine, you can add a gallon zip top bag filled with ice on top to keep it submerged.

Turkey Sandwich

  1. Spread mayonnaise and dijon on the bread. Pile high with lettuce, 4 ounces turkey, cheese, tomato and bacon. Slice in half if you're feeling extra fancy.
