  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup cocoa powder
  • 1 teaspoon instant espresso powder
  • 1 1/2 cup flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 3/4 cup mayo
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 cup chocolate chips
  • 1 1/2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 1/2 cup raspberries


  1. Preheat the oven to 350 degrees F. Grease a 9 inch square baking pan and line with parchment paper.
  2. Add the espresso powder to 3/4 cup boiling water. Combine chocolate chips, cocoa powder and hot coffee in a medium bowl. Stir to melt the chocolate. Whisk the flour, baking soda, baking powder and salt in a separate bowl. When the coffee chocolate mixture has cooled slightly, whisk in the mayonnaise and sugars. Whisk continuously for 1 minute, then whisk in the vanilla and egg. Add the dry ingredients to the wet and stir to combine. Fold in chocolate chips. Pour the batter into the greased, lined pan and bake for 30-35 .
  3. Whisk the heavy cream and powdered sugar to stiff peaks. Allow the cake to cool completely and then top with whipped cream.
