For the peanut butter banana muffins: Serve pre-made muffins alongside sliced apples or other fruit.
For the egg salad sandwiches: Peel and chop the hard-boiled eggs. Add to a bowl with mayo, mustard, scallions, salt and pepper. Stir to combine. On a slice of bread, add some egg salad, tomato slice and lettuce. Top with a second slice of bread.
For the fajitas and rice: Heat a medium skillet over medium heat and add the oil. Add the onions and pepper and saute for 5 to 7 minutes. Stir in spices and brisket.
To make the rice: Add the rice, tomatoes, cumin, beans, salt and pepper to a skillet and cook over medium heat until heated through. To assemble, place some onion, pepper and brisket mixture in a flour tortilla. Top with cheese and sour cream. Serve alongside rice.
