Ingredients

  • For the Meatballs:
  • 1 lb ground beef
  • ½ cup chopped onion
  • ¼ cup chopped green onion
  • 1 egg
  • 1 teaspoon. black pepper
  • 1 teaspoon. garlic powder
  • 4 tablespoons long-grain rice
  • All-purpose flour, as needed
  • For the Soup:
  • 6 cups water
  • 3/4 cup tomato salsa
  • 1 1/2 teaspoon chicken base
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon dried oregano

Steps

  1. For the Meatballs: Combine all ingredients in a large bowl and mix together with your hands. To form the meatballs, take 1 tablespoon of the mixture at a time and roll it into balls adding flour to your hands if needed to prevent it from sticking.
  2. For the Soup: Add all the ingredients to a deep pot and bring to a boil. Carefully add the formed meatballs and return to a boil after all meatballs have been added. Boil for an additional 5 minutes. Serve in a cup or bowl.
