Ingredients

Fish & Grits

  • 1 lb Rockfish fillet, skinless
  • Fish Seasoning Spice Mix, recipe follows
  • 2 cups cornmeal
  • 2 eggs, whites only
  • 4 cups frying oil (canola or vegetable)
  • Fish Sauce, recipe follows
  • Grits, recipe follows
  • 2 scallions, sliced, for garnish

Fish Seasoning Spice Mix

  • 1 cup all purpose flour
  • 1 tablespoon garlic powder
  • 1.5 tablespoons onion powder
  • 1 teaspoon cayenne powder
  • 1 teaspoon black pepper
  • ½ tablespoon paprika
  • ½ tablespoon smoked paprika
  • 2 tablespoons old bay seasoning
  • ⅛ teaspoon ground cumin

Fish Sauce

  • 1 tablespoon vegetable oil
  • ¼ cup yellow onion, diced
  • ¼ cup carrot, diced
  • Reserved fish trimmings
  • 2 tablespoons Fish sauce Spices, recipe follows
  • 1 cup water
  • ¼ cup tomato juice

Fish Sauce Spices

  • 1 tablespoons paprika
  • 1/2 tablespoon smoked paprika
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne

Grits

  • 1 cup white corn grits
  • 3 cups water
  • ½ teaspoon kosher salt
  • 4 tablespoons unsalted butter, divided
  • 1 cup aged white cheddar, shredded
  • 2 tablespoons cream

Steps

Fish & Grits

  1. Cut fish into 2 portions, trimming off the thinner sides for a more uniform shape and even thickness. Reserve trimmings for Fish Sauce.
  2. Mix Fish Seasoning Spice mix and cornmeal.
  3. Beat egg whites until frothy.
  4. Fill a deep pan with 2-inches of frying oil and heat to 350°F.
  5. Dip rockfish filets in egg whites then dredge in seasoning.
  6. Fry at 350F for 2-3 minutes until golden brown, flip after 1 minute to ensure even browning.
  7. To serve, spoon the grits to a bowl. Spoon fish sauce around and on top of the grits. Top with fried fillets and garnish with sliced scallions.

Fish Seasoning Spice Mix

  1. Mix all ingredients well in a bowl.

Fish Sauce

  1. Heat the oil until very hot and add the onions and carrots. Cook until the veg is softened, about five minutes. Add fish trimmings and spices and cook for one minute and then add water and tomato juice. Cook over low heat, partially covered, for an hour. Taste and reduce another few minutes if the taste isn't strong enough. Strain before serving.

Fish Sauce Spices

  1. Mix all ingredients well in a bowl.

Grits

  1. Add water, salt and 2 tablespoons butter to a medium saucepan. Add grits, bring to a boil and reduce to a simmer.
  2. Let cook, stirring often for 30 minutes or until creamy. Add water to thin to desired consistency, if necessary.
  3. Add cheddar and stir to melt the cheese. Finish by folding in the remaining 2 tablespoons butter and the cream.
