Ingredients

Spring Salad with Seasonal Vegetables and Honey-Berbere Dressing

  • 4 cups spring lettuce (little gem, spotted, mixed greens, or whatever you prefer)
  • 2 rainbow carrots, peeled
  • 2 watermelon radishes, peeled
  • 4 baby turnips, peeled
  • Honey-Berbere Dressing, recipe follows

Honey-Berbere Dressing

  • 4 tablespoons fresh ginger, minced
  • 1 teaspoon espelette
  • 2 heaping tablespoons berbere spice
  • 2 tablespoons honey
  • 1/3 cup lemon juice
  • 1/3 cup champagne vinegar
  • 1 ½ cups extra virgin olive oil
  • 2 teaspoons salt

Steps

Spring Salad with Seasonal Vegetables and Honey-Berbere Dressing

  1. Shave carrots, watermelon radish and turnips on a mandoline. Add to salad bowl and toss with dressing to coat.

Honey-Berbere Dressing

  1. Whisk all ingredients together to emulsify.
