Ingredients

Grilled Flank Steak

  • For the Steak:
  • 2 lbs flank steak
  • Cilantro Chimichurri, recipe follows
  • For the Marinade:
  • 1 cup lime Juice
  • 1/2 cup red wine Vinegar
  • 1/4 cup olive oil
  • 4 cloves garlic, crushed
  • 1 onion, finely chopped
  • Salt and pepper
  • 2 tablespoons Worcestershire Sauce
  • 1 jalapeno, finely chopped

Cilantro Chimichurri

  • 1 cup cilantro, leaves and tender stems, minced
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon chili pepper flakes
  • 3/4 cup extra virgin olive oil
  • kosher salt, to taste

Steps

Grilled Flank Steak

  1. Put all marinade ingredients in a bag or bowl with steak and allow to marinade 30 min-overnight.
  2. Heat a grill pan over high heat. Add the steak being careful not to overcook. 6 minutes on one side; 4 minutes on the other side, until the internal temperature reaches 135F. Remove from grill and let rest, 5 minutes. Slice against the grain.

Cilantro Chimichurri

  1. Wash and finely chop cilantro.
  2. In a medium bowl, mix together the cilantro, garlic, lemon juice, and chili pepper flakes.
  3. Whisk in olive oil.
  4. Season with salt to taste.
